Delicious home-made Croutons

Do you know how easy it is to make croutons? First, heat your oven to 400 degrees. Then take any kind of non-sweet leftover bread -- can even be a combination of white, wheat, rye, etc. Cut into 3/4" cubes, enough to make 4 cups. Place in a mixing bowl and drizzle 2-3 Tbs. extra virgin olive oil over the cubes. Toss them good and add 1/4 tsp. of Sea Salt and Herbs, 1/4 tsp. garlic powder, and a few grindings of fresh pepper. Toss again, then spread on a large baking sheet. Bake in the preheated 400 degree oven for 12-14 minutes, or until nicely golden brown. You will never buy packaged croutons again! And you can store these in an air-tight container for up to 3 months.

Super good!

I decided to add this to rice last night, to go with the chicken stir fry I was making. For 2-3 servings, just measure 1/2 cup of a good organic brown rice (Hukkura is my favorite), add about 1 1/4 cup of water, 1/2 tsp. of chicken broth granules, and 1/2 tsp. of sea salt and herbs. Let it simmer for about 40 - 45 minutes, checking periodically to see if it needs more water. When it is done (all the broth absorbed and rice is the right texture), add 1 Tablespoon of butter, and stir until the butter melts. Ready to serve! It was the perfect seasoning for rice, and really tasted great with the peppa orange chicken and vegetable stir fry.
